FOLLOW THE PROCESS
See how it comes together

Cut, season & spread out
Cut carrots thinner than zucchini. Toss with the measured oil and ground salt, then spread in a single layer.

Roast & check the tray
Use oven mitts when handling the hot tray. Turn the vegetables halfway through roasting and check for browned edges and tenderness.

Finish & serve
Check for tender vegetables and browned edges. Add lemon and taste before adjusting the seasoning.
Follow the detailed instructions below for quantities and timing.
Ingredients
- 600 g mixed carrots, zucchini and bell pepper
- 2 tablespoons olive oil
- 2 g finely ground sea salt
- ½ teaspoon dried oregano
- 1 tablespoon lemon juice
- Black pepper, to taste
Method
- Heat the oven to 220°C / 425°F. Cut the vegetables into similar bite-size pieces, cutting carrots slightly thinner.
- Toss with olive oil, ground sea salt, oregano and pepper. Spread in one layer on a large baking tray.
- Roast for 25–30 minutes, turning halfway, until the vegetables are tender and browned. Timing varies with the cuts and oven.
- Toss with lemon juice. Taste before adding any extra seasoning. Serve warm.
Grind the coarse Sea Mount sea salt before weighing. If finishing with grey salt, reduce the initial salt and taste before adding more.
Make it work in your kitchen
Cut for even cooking
Dense carrots need smaller or thinner pieces than zucchini. Aim for pieces that will become tender at a similar time.
Give the tray space
Leave space between the vegetables. If they overlap heavily, use two trays so moisture can escape.
Choose your grain
Grind coarse salt before tossing with oil. Fine grains cover the vegetables more evenly than large crystals.
Finish with balance
Add lemon after roasting and taste before any additional salt. Optional grey salt is a finishing choice, not an automatic extra dose.
Cooking times are approximate. Check texture and doneness as you cook, and adjust seasoning to taste.
