Prepare the corn & seasoning

Remove husks and silk, pat dry, brush lightly with oil and measure the salt separately.

Grill & turn

Turn the corn every few minutes until tender and lightly charred. Move away from direct heat if it darkens too quickly.

Season after cooking

Squeeze lime over the warm corn. Add some of the measured ground salt, then taste before using the rest.

Follow the detailed instructions below for quantities and timing.

Ingredients

  • 4 ears of corn, husks and silk removed
  • 1 tablespoon olive oil
  • 1 lime, cut into wedges
  • 2 g finely ground pink salt or sea salt
  • ¼ teaspoon freshly ground black pepper
  • Optional: 1 tablespoon chopped coriander or parsley

Method

  1. Preheat an outdoor grill to medium-high heat. Follow the grill’s operating instructions. Pat the corn dry.
  2. Brush the corn lightly with olive oil, covering all sides. Keep the lime and measured salt for finishing.
  3. Place the corn on the grill. Cook for approximately 10–15 minutes, turning every few minutes, until the kernels are tender and lightly charred. Move away from direct heat if it blackens too quickly.
  4. Transfer to a platter. Squeeze lime over the warm corn, sprinkle with some of the measured salt and pepper, and turn to distribute. Taste before adding the remainder.
  5. Finish with optional herbs and serve warm.

Grind coarse salt before measuring so the seasoning spreads evenly. Cooking time depends on the grill and size of the corn.

Make it work in your kitchen

No outdoor grill?

Use a ridged grill pan on the stove, turning regularly and cooking until tender. Ventilate the kitchen.

Avoid burnt seasoning

Add lime and most of the salt after cooking so you can control the final balance.

Serving idea

Pair with a leafy salad or roasted vegetables. Keep a lime wedge alongside rather than automatically adding more salt.

Cooking times are approximate. Check texture and doneness as you cook, and adjust seasoning to taste.
